Hi guys
I'm just wondering, what height should the tune-o-matic bridge should be for the LP 100?
If that makes sense at all...

HOORRAYYY!!!! Someone else with an LP100 :D
I just got my guitar set up by a guitar tech and currently the bridge is sitting at 1.5cm high, but I'm not actually sure that's the deciding factor in setting your guitar up properly. The LP100 is pretty much the same as any of the Gibson/Epiphone Les Paul range in that if you want the strings higher or lower against your fretboard, you'd adjust the truss rod. If you want to adjust the intonation of a particular string (that is, when your guitar is in tune, the note at the 12th fret on each string is the same as the open string but a whole octave higher) you'd adjust the bridge screw for that particular string.
But those big screws? I don't think they adjust the height of the bridge. I'm pretty sure they just change the angle of the bridge so that you can set the intonation of the guitar better.
But anyway, someone else might be able to confirm or deny my claims, lol.

there are several factors that affect bridge height. Gage of strings, the type of action a player likes. Usally bridge height is adj according to string height at certian place on the fretboard. I would suggest going to the manufactures website, most have the tech manuals for the different models that they make and in them they will state what the setup is from the factory. Fenders web site is great for getting this type of information, but I would think that any of the top manufactures would also have that kind of info.
